Mushroom and Avocado Salad


8oz button mushrooms, sliced
1 teaspoon Kosher salt
1 tablespoon lemon juice
3-4 cups of  lettuce (any kind but Iceberg), torn or chopped
2 green onions, sliced
2 ripe avocados, cubed
1/4 cup light sour cream or plain yogurt
1 tablespoon olive oil

In a medium bowl combine the sliced mushrooms, salt and lemon juice. Let it rest for about 10 minutes, until the mushrooms absorb the flavors and release their juices. In a large bowl combine the mushrooms and all the juice, and the rest of the ingredients. Mix well and enjoy!!
