Lemon Avocado Scones and Coconut Hot Chocolate

For a while now I have been craving scones, especially after reading the fabulous scone recipes my fellow bloggers have posted ( which I promise I will try!) but I had an idea. A few weeks ago I read an article on how avocado could replace butter in baked goods boosting its nutritional value and decreasing calories! It does not affect the flavor and it departs a soft and light texture to them. I served these scones with a rich and delicious Coconut Hot Chocolate (recipe follows).

Makes 12 scones
Ingredients

1 Hass Avocado
1 tablespoon canola oil
2 eggs
1/4 cup sugar
Grated zest of 2 lemons
1/4 cup sour cream or plain yogurt
1/4 cup milk
1/2 cup whole wheat flour
1 1/2 cups unbleached all-purpose  flour
1 tablespoon baking powder
1/4 teaspoon salt
Cinnamon and sugar for sprinkling

Directions

Preheat the oven to 400 degrees F. 
In a blender or food processor puree the avocado with the oil.
Add the eggs and mix well.
  Incorporate the sugar, lemon zest, sour cream or yogurt and the milk. Mix well. 
In a big bowl, sift the flours, baking powder and salt. Add the avocado mixture.
Mix with a spoon until just moistened. 
Drop spoonfuls of batter onto a baking sheet lined with parchment paper (I used an ice cream scoop). Flatten them with another spoon, sprayed with oil if necessary.
Sprinkle the scones with sugar and cinnamon, if desired.
Place the baking sheet on a rack in the center of the oven. Bake for 20-25 minutes, or until golden brown. 

Serve warm and ENJOY!!



Coconut Hot Chocolate

Makes 1 serving


Ingredients

1 cup of milk
  1 pinch of salt
4 teaspoons of unsweetened cocoa powder
2 teaspoons of sugar, or to taste
1/4 teaspoon of coconut extract


Directions

Warm the milk in the microwave or stove top. Pour into a blender and combine with the rest of the ingredients. Blend until well combined. Serve!
